This 5-day journey is designed for travelers who want to discover Japan through the flavors that define it. Based entirely in Tokyo, the itinerary follows the story of fermentation — soy sauce, miso, sake, and dashi — through historic markets, long-established breweries, and quiet neighborhood shrines.
In Tokyo, browse the lively stalls of Tsukiji Outer Market, meet a miso specialist who has been blending since 1934, and walk through the grounds of Senso-ji, the city’s oldest temple. Travel out to the soy sauce town of Noda to compare moromi mash at three stages of brewing and grill your own soy sauce senbei, then head west to the Tama River valley, where a sake brewery founded in 1702 still welcomes visitors beside the clear waters of Mitake Gorge.
With a knowledgeable guide, tastings at each stop, and unhurried days that leave your evenings free, this tour offers a relaxed and rewarding way to understand Japanese cuisine from the inside — especially ideal for food lovers who want depth rather than distance.
